Carrot Cake Energy Balls

With kids asking for snacks multiple time every day, I love to have easy options on hand. I especially like ones that are easy to make, incredibly tasty, and have a little veggie mixed in! Can you relate? Of course you can.  

This recipe check ALL the boxes and it is a great one to get kids involved with to help too!

Here is the recipe:

Carrot Cake Energy Balls

Ingredients

1 cup cooked quinoa

1 cup rolled oats

2/3 cup pumpkin seeds

2/3 cup natural peanut butter (or any nut / seed butter you have on hand)

1/4 cup pitted dates (or raisins)

1/4 cup honey

1 tsp cinnamon

1 carrot, peeled and chopped

Directions

  1. Put all ingredients into your food processor.  Blend on low speed for 1 minute, and then on high until all ingredients are mixed together.
  2. Form into balls and serve! (It is best to store leftovers in the fridge.)

If you are looking for a new food processor, I love this one from Hamilton Beach because it has a large capacity and scrapes the sides as you go!
