Bell Pepper and Quinoa Bean Dip

This dip is the ultimate of nutrient dense. It offers veggies, complete protein, omega 3 fatty acids, fibre, tons of vitamins, minerals, and antioxidants. Not to mention it is SO delish! And yes, if you are wondering, my kids even like it. Whether you enjoy it as part of snack lunch or out it out with sliced veggies for everyone to enjoy while supper is cooking, this is an amazing dip to have on hand in your fridge any day!


1 can of refried beans

2 cups cooked quinoa

1 red peppers

1 large tomato

1 Tbsp. olive oil

1 tsp. pureed garlic

2 Tbsp. fresh cilantro, chopped

Instructions: Add all ingredients to a food processor and blend until smooth.
