Tacos are a weekly go-to in our home. I love how the combinations of veggies, protein, sauces, and other toppings are endless. Today I wanted to share an incredible new dressing we have been adding to tacos in three different ways: Cedar Valley Selections Avocado Lime. You can find this and other CV Selections dressings at Whole Foods in Ontario and select additional retailers.
Black Bean Quinoa Tacos:
Ingredients:
Your choice of hard or soft taco shells (1-2 per person)
1/2 cup Cedar Valley Selections Avocado Lime Dressing (in split portions)
1 cup cooked quinoa
1 cup diced onions
1 cup diced peppers
1 cup diced tomatoes
1 can, No Salt Added Black Beans
1 cup shredded cheese (cheddar, Monterey jack, or dairy free)
Guacamole (or diced avocado)
Salad greens
Instructions:
- Add cooked quinoa, diced onions, diced peppers, and 1/3 cup Cedar Valley Selections Avocado Lime Dressing to your favourite stove-top pan.
- Stir all ingredients together and heat on medium heat until veggies start to soften.
- Add 1 can of black beans (rinsed and drained) and stir gently until they are heated through.
- Place mixture into your choice of hard or soft taco shells or on a bed of greens to make a taco salad. Add shredded cheese, guacamole or diced avocado, diced tomatoes, and another drizzle of the Avocado Lime dressing to finish the dish off.
- Serve with your choice of salad greens.
Chicken/Turkey Tacos: This version of tacos works with ground or sliced chicken or turkey (or even firm tofu)!
Ingredients:
Your choice of hard or soft taco shells (1-2 per person)
1/4 cup Cedar Valley Selections Avocado Lime Dressing
2 Tbsp. low sodium taco seasoning
1 pound of ground chicken/turkey OR chicken/turkey breast sliced
1 cup diced onions
1 cup diced peppers
1 cup diced tomatoes
1 cup shredded cheese (cheddar, Monterey jack, or dairy free)
Salad greens
Guacamole (or diced avocado)
- Mix together 1/4 cup Cedar Valley Selections Avocado Lime Dressing, 2 Tbsp. low sodium taco seasoning, and 1 Tbsp. water and set it aside.
- Cook your favourite protein source on the stove top. Once cooked through add the sauce from above and stir until warmed through.
- Place protein mixture into your choice of hard or soft taco shells or on a bed of greens to make a taco salad. Add shredded cheese, diced peppers, onion, and tomatoes, and another drizzle of the Avocado Lime dressing to finish the dish off.
- Serve with freshly made guacamole, your choice of salsa, sprigs of cilantro, and your choice of salad greens.
Avocado Lime Shrimp Tacos
Ingredients

Your choice of hard or soft taco shells (1-2 per person)
1/4 cup Cedar Valley Selections Avocado Lime Dressing
2 cups cooked and frozen baby shrimp
1 cup diced peppers
1 cup diced pineapple or mango
1 cup diced cucumber
1 cup diced tomatoes
1 cup shredded cheese (cheddar, Monterey jack, or dairy free)
Salad greens
Guacamole (or diced avocado)
Instructions
- Wash all fresh produce.
- Dice veggies and fruit and place into small serving dishes.
- Shred cheese and place it into a small serving dish.
- Rinse shrimp in a strainer with cold water, add to a fry pan, and heat on medium heat until they are warmed through. Drain water from pan and add Cedar Valley Selections Avocado Lime Dressing. Stir until shrimp are coated.
- Make tacos by layering ingredients into the shells.
- Top with a squeeze of lime juice and piece of cilantro.
