Sweet Onion Mango Chicken

Here is a quick recipe that our family loves! It is a variation of my chicken crock pot recipe. It is quick and easy to make and can be prepped hours ahead of time. It is also perfect to use as lunch leftovers the next day…whether heated back up with leftover sides from supper or added to a salad or inside a wrap.

Ingredients

4-6 Boneless, skinless chicken breasts

1/2 cup The Keg Mango Sesame dressing (or alternate mango dressing or marinade) mixed with 1/4 cup water

1 large or 2 small sweet onions

1 mango

Instructions

  1. Chop chicken breasts into strips or cubes and place in baking dish.
  2. Peel, and dice onion and mango, and place on top of chicken.
  3. Pour sauce and water mixture over chicken and onions and toss together.
  4. Bake covered at 375 degrees F for 40-45 minutes (until chicken is cooked through and no pink is visible). If you choose to leave the chicken breasts whole, then your baking time will be longer and the chicken may not be as tender.

Serving suggestions…this chicken is great with starches such as sweet potatoes, roasted red potatoes, brown and wild rice, or beets; vegetables such as cauliflower, broccoli, snap peas, or Brussel sprouts; or just on a nice big kale or spinach salad with other fresh diced veggies.
