I love to bring unique things to family gatherings so this year Rhett and I experimented with various recipes and came up with a few “puddings”. This one we added a little quinoa to the mix to give a protein boost. We came up with a lovely, moist dish that can be served warm or cold, on its own or with a bit of yogurt, as part of the main meal, as a snack, or even a dessert! Here is how to make it
Ingredients
1 zucchini, chopped.
2 cups cooked quinoa
1/2 cup steel cut oats
1 cup roasted sweet potatoes
1 apple, diced
10-12 pitted dates
1 cup coconut milk
2 Tbsp. ground flax seed
1/3 cup hemp hearts
1/4 cup maple syrup or honey or agave
3 bananas
2 tsp. cinnamon
1 tsp vanilla
2 tsp baking powder
1 cup unsalted cashews
Instructions
1. Pour milk, cashews, and dates into a blender or food processor. (I used a vitamix). And blend on low. Add bananas and sweet potatoes, continuing to blend. Then add all other ingredients except for the oats and increase to medium or medium high speed to get everything blended together.
2. When all ingredients are blended pour mixture into a bowl and stir in the oats. Then pour into a baking pan as cook at 350 F for about 30-35 minutes or until a knife comes out clean.
This is really a wonderful recipe to make with your kids. They can help chop the zucchini and banana and they will LOVE pouring all the incredients into your blender or food processor! As always with foods that contain hemp hearts or flax seed, please remember to store this in the fridge.
