AVOCADO BROWNIES

Creating a good relationship with food means enjoying treats along the way. I like to add as much nourishment to treats as possible. It doesn’t mean we can over indulge in them. It just means there is some extra nutrition in the serving we take. Here is a fun recipe that you can make with your kids for a holiday gathering. If you want to make them peanut free you could use almond butter or sun butter in place of the peanut butter.

Ingredients

1 bag Chipits dark chocolate chips
1 avocado
1/3 cup coconut oil
1/2 cup cooked quinoa
1/2 cup frozen peas (thawed…you can mash them down or leave whole)
1 egg
1/3 cup Manitoba Harvest hemp hearts
1 tsp cinnamon
1 tsp vanilla
10 dates
1/2 cup peanut butter (or alternate nut or seed butter)
1 cup whole wheat flour
1 tsp baking powder

1/2 cup KIND SNACKS peanut butter granola (optional)

Instructions

1. Mix together dark chocolate chips and coconut oil and put in the microwave for 60-90 seconds. Stir after heating until smooth.

2. Stir in the egg, and then all other ingredients, except for flour, and blend in a high powered blender or food processor until dates are blended in. Then pour into a bowl and add flour for the last addition.

3. Pour into a pan for baking then top with your favourite granola. I chose KIND SNACKS peanut butter granola for ours.

4. Bake at 375 F for about 25-30 minutes (or until a knife comes out clean).

5 Enjoy with a glass of your favourite milk and a few slices of banana or berries.
