I love celebrations and making fun food that is “themed” but I also like to keep things fun and simple so the kids can be involved. This year for Canada Day weekend we have enjoyed “Strawberry Milk” (literally strawberries and coconut milk blended together), refreshing red and white smoothie pops, and fun snacks with all the red and white foods I could think of.
We also made a delicious Strawberry Cherry Cake and it was a huge hit with everyone! Here is the recipe if you want to try it too. And if you are a friend from south of the border you can add blueberries to the topping for a wonderful “red, white, and blue” version.
Ingredients
1/2 cup Greek yogurt or Coconut milk based yogurt for dairy free
1/3 cup canola oil
1 egg, beaten
1 cup frozen, pitted cherries
1 cup frozen strawberries
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. baking powder
1 cup whole wheat flour
1 cup oats
Optional sweetening agent of 1/4-1/3 cup maple syrup, honey, or coconut sugar
Optional topping: 1/3 cup cream cheese or goat cheese and sliced strawberries or alternate fruit
Instructions
Mixing Option 1: Add all ingredients in the order they are listed to a high speed blender (I use a Blendtec) and mix on the “batter setting” or on low speed if your blender does not have a batter setting.
Mixing Option 2: Add all dry ingredients together and blend well. Then add wet ingredients and mix together thoroughly.
Baking: Pour batter into a round or square pie plate or cake pan and bake at 375 F for about 45 minutes or until a knife comes out clean.
Serving option 1: Cut into pieces and serve with your choice of yogurt and berries.
Serving option 2: Spread cream cheese or goat cheese on the surface and top with sliced strawberries or alternate fruit of your choice.
