With the cold weather moving in I crave soup! Can you relate?
It’s such a comfort food that also brings incredible flu-fighting antioxidants….something we really need this time of year! But sometimes life is so busy that it is hard to find time to make soup. I am so thankful that, even though my schedule is busier that ever, I can now make soup very quickly! Want to know my secret???
The Hamilton Beach Multi-Function Pressure Cooker! This amazing “new to me” appliance can take large pieces of carrots, potatoes, onions, and more and cook everything perfectly in less than 30 minutes. Then, all I have to do is blend it and serve it! I am in awe every batch I make! I have also loved using this incredible small appliance for pulled chicken, bean stews, hard-boiled eggs, and more! I will be sure to share more recipes throughout the fall and winter. For today I thought I would share one of my favourite soup recipes with you.
Since soup is such a beautiful dish that can be made different every time, please feel free to add your personal touch to the ideas below!
Ingredients
6 large carrots, peeled and cut into large pieces
2 sweet potatoes, peeled and cut into large pieces
1 sweet onion, peeled and cut into large pieces
4 apples, cored and quartered
2 garlic cloves, peeled
2 cups vegetable broth
2 cups water
3 Tbsp. maple syrup
1/2 Tbsp. sweet curry powder
1/2 Tbsp. cinnamon
1 tsp. turmeric
1 tsp. cumin
1 tsp. black pepper
Instructions
- Place all food items into your Hamilton Beach Multi-Function Pressure Cooker.
- Add maple syrup, spices, broth, and water. Feel free to add extra spice if you and your family prefers spicier options.
- Turn the Hamilton Beach Multi-Function Pressure Cooker on to the “SOUP” setting.
- When the Pressure Cooker is done, blend the soup in your Hamilton Beach Blender or Food Processor and serve.
