No strawberries on hand? Try peaches, apples, pears, blueberries, cherries, or rhubarb!

Strawberry Muffins

2 ripe bananas β£
1 egg
1/3 cup applesauce
1/3 cup maple syrup β£
1/4 cup avocado oil β£
2 tsp. vanilla extract β£
1.5 cup rolled oats β£
1 cup whole wheat flourβ£
1 tsp cinnamon β£
2 tsp baking powder β£
5-6 strawberries, washed and dicedβ£

1) Set your oven to 350F. β£
2) Wash, hull, and dice the strawberries. Set aside. β£
3) Mash bananas in a medium-size mixing bowl and add all of the other wet ingredients. Once blended well add all the dry ingredients and stir until blended without over-mixing. β£
4) Pour batter into muffin tin and then add 6-8 of strawberry pieces to each one and gently mix them in with a small spoon. β£
5) Bake for 25 minutes then let cool for 5-10 minutes before removing from pan. Enjoy!
