School-Safe Granola Two Ways

Well mama, after a lengthy break from packing school lunches, we are back in the rhythm of it and I want you to know that I am here for you to provide ideas and inspiration. If you are in a rut for ideas on what to pack, stay tuned for my “What’s for lunch Wednesday” posts here on the blog and on instagram.

Today’s lunch is packed in a Planet Box Launch and has a homemade granola bar that is packed with high quality protein, iron, omega 3 fatty acids, and more! And the best part is that the ingredients are the exact same as our family’s favourite homemade granola. The only differences are how long you blend them in the food processor and what pan you cook them in.

One of the key ingredients in these recipes Profi Protein Powder. This is my favourite plant-base protein power because it is made with a mix of several plant proteins, but not soy; it has a wonderful flavour and texture in smoothies; it works well to use as a protein-boost in baked goods; and it is a good source of iron. I also love that Profi gives back to the community through their #ProfiCares Campaign. For every jug sold, a portion of the proceeds is given to a “charity of the month”.

Okay, now onto the full recipe details!

Ingredients

1.5 cups rolled oats ⁣

1 scoop Profi Vanilla Protein Powder (or Profi Protein Booster with 2 tsp. vanilla extract) ⁣

1 cup pumpkin seeds ⁣

1 cup shredded coconut ⁣

1 cup chopped dates/dried apricots/raisins ⁣

1/3 cup honey⁣

1/3 cup coconut oil, melted ⁣

1/3 cup hemp hearts ⁣

2 tsp. cinnamon ⁣

Directions for granola… ⁣

1) Set oven to 300F. ⁣

2) Add all ingredients to your food processor. (We use one from Hamilton Beach Canada and love it!) ⁣

3) Turn the food processor on low for 30-60 seconds and then pour contents onto a baking stone. ⁣

4) Bake at 300F for about 40-45 minutes (or until it has reached the texture you desire). ⁣

Directions for granola bars…

1) Set oven to 300F. ⁣

2) Add all ingredients to your food processor. (We use one from Hamilton Beach Canada and love it!) ⁣

3) Turn the food processor on low for 2-3 minutes – until all ingredients are well blended. ⁣

4) Pour blended ingredients into a pan and press down on them well until they are packed in to the corners and the surface is flat.

5) Bake at 300F for about 40-45 minutes – until the edges are golden. Let cool for 15-20 minutes, then cut into rectangles and enjoy!
