No strawberries on hand? Try peaches, apples, pears, blueberries, cherries, or rhubarb!

Strawberry Muffins
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
2 ripe bananas
1 egg
1/3 cup applesauce
1/3 cup maple syrup
1/4 cup avocado oil
2 tsp. vanilla extract
1.5 cup rolled oats
1 cup whole wheat flour
1 tsp cinnamon
2 tsp baking powder
5-6 strawberries, washed and diced
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬
1) Set your oven to 350F.
2) Wash, hull, and dice the strawberries. Set aside.
3) Mash bananas in a medium-size mixing bowl and add all of the other wet ingredients. Once blended well add all the dry ingredients and stir until blended without over-mixing.
4) Pour batter into muffin tin and then add 6-8 of strawberry pieces to each one and gently mix them in with a small spoon.
5) Bake for 25 minutes then let cool for 5-10 minutes before removing from pan. Enjoy!
