Strawberry Muffins

Do you love having muffins on hand for quick, easy, and nutrition-packed snacks during the week for you and your kids? If so, this is a recipe you will want to try!

No strawberries on hand? Try peaches, apples, pears, blueberries, cherries, or rhubarb!

Strawberry Muffins

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 ⁣
2 ripe bananas ⁣
1 egg
1/3 cup applesauce
1/3 cup maple syrup ⁣
1/4 cup avocado oil ⁣
2 tsp. vanilla extract ⁣
1.5 cup rolled oats ⁣
1 cup whole wheat flour⁣
1 tsp cinnamon ⁣
2 tsp baking powder ⁣
5-6 strawberries, washed and diced⁣

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬 ⁣
1) Set your oven to 350F. ⁣
2) Wash, hull, and dice the strawberries. Set aside. ⁣
3) Mash bananas in a medium-size mixing bowl and add all of the other wet ingredients. Once blended well add all the dry ingredients and stir until blended without over-mixing. ⁣
4) Pour batter into muffin tin and then add 6-8 of strawberry pieces to each one and gently mix them in with a small spoon. ⁣
5) Bake for 25 minutes then let cool for 5-10 minutes before removing from pan. Enjoy!
