6-Day Refrigerator Oats

For many it is hard to fit eating breakfast in within an hour of waking up. Whether it is hard to get out of bed or busy schedules with kids, time in the morning just seems to evaporate! And yet waiting an extended amount of time for nourishment can lead to trouble concentrating mid-morning and temptation to overeat later in the day. If this is the case for you, then perhaps you want to try my “6-day refrigerator oats”. You can make these on Sunday evening and enjoy them all week long with a side of fruit.  They are packed with protein, fiber, omega 3 fatty acids, and more! 

To make them, layer the ingredients listed below in a large mason jar, then shake everything together and place in the fridge for at least 12 hours.

1.5 cups steel cut oats

1/3 cup sunflower seeds 

1/3 cup pumpkin seeds 

1/3 cup hemp hearts 

1-2 tsp. cinnamon 

1 tsp. of vanilla extract 

1 Tbsp. maple syrup 

3 cups coconut milk 

I like to serve mine with fresh fruit such as diced apples, berries, grapes, and/or pomegranate seeds!
