Avocado and Pea Brownies

Ingredients
2 eggs
1 avocado
½ cup frozen peas, thawed
½ cup coconut sugar
½ cup whole wheat flour
½ cup cocoa powder
1/3 cup dark chocolate chips
3 tbsps. avocado oil
½ tsp. vanilla extract
1 tsp. baking soda
Directions:
- Preheat the oven to 350F.
- Blend wet ingredients. Peel the avocado. Add the avocado, thawed peas, eggs, vanilla, coconut sugar and oil to a food processor or blender and mix well until combined.
- Add dry ingredients. Add the flour, cacao powder, and baking soda. Process again until the 3 are combined. Stir in the chocolate chips, reserving some to place on top.
- Bake brownies. Smooth the top down and sprinkle the remaining chocolate chips on top. Bake for 18 to 20 minutes.
- Let them cool. Remove from the oven and let cool before cutting into bites. Enjoy!
