Cinco de Mayo Taco Recipe Round Up

I could honestly eat some form of tacos every night of the week. They are they fun, tasty, easy to make, and can also be packed with nutrition! So with Cinco de Mayo coming up I thought it would be a great time to share some of our family favourites. Any can be make in a hard or soft shell, a tortillas bowl, or even a piece of romaine lettuce!

Sweet Chili Shrimp Tacos are a fun variation on a traditional taco. And when topped with a squeeze of lime and a few pieces of cilantro the perfect combo of fresh, sweet, and savoury is over the top! You can watch me make them on YouTube here and find the full recipe card here.

For a more traditional, but still heart healthy option try Chicken/Turkey Tacos instead of beef. Cook it on the stove top in a little but of water and then add in low sodium or sodium free taco/fajita seasoning. From there add bright coloured toppings such as diced peppers, tomatoes, cucumber, onions, avocado, and shredded cheese. To add a little more fibre without sacrificing the protein content, use half chicken/turkey and half tofu, black beans, or edamame.  If you are looking for a vegan options,  try Black Bean and Quinoa Tacos with all the veggies mentioned above and a vegan shredded cheese. Quinoa offers a complete protein which means it contains all of the essential amino acids your body needs to make a body protein. The black beans also offer a source of protein, as well as fibre and antioxidants.

And if you aren’t a big fan of making tacos, you could always try these Irish Nachos or a Taco Salad! Bottom line….you can never go wrong with tacos! Happy Cinco de Mayo!
